The SMU Farmers Market was a great success with over 300 people attending to learn about and purchase fresh produce and herbs. Many unique items were available such as kumquats, hydroponic basil and lettuce, starfruit and wheat grass.
Chef Tim Schaub, of SMU Dining Services, was available to educate shoppers on ways to prepare these new delights as well as less exotic market produce like carrots, mushrooms, potatoes and  onions. Representatives from Fresh Produce, a local produce wholesaler and Aramark supplier, were guest attendees and provided education on ways to select, clean and store fresh produce.   Â
In addition, market attendees had access to nutrition tips from SMU’s Dietician, Claire Forsheim, and low-cal recipes served in the Spa section of RFoC.
Other vendors included the SMU Sustainability Committee who handed out energy efficient lightbulbs and Dedman Center who provided demos and info on fitness classes for faculty, staff and students (yup, we even had a belly dancer demonstration!).
Professor Elaine Thomas (Theology) provided tours of the SMU Community Garden and Ann Allen and Cathy Coates shared their green thumbs in a lunch and learn on Container Gardening!
